Instructions
- Preheat the oven to 400°F and line 12 muffin wells with liners.
- In a large bowl, combine flour, baking powder, salt, brown sugar, cinnamon, and nuts.
- Make a well in the center and in a smaller bowl, whisk together the egg, buttermilk, vanilla, almond extract, and oil.
- Add the wet ingredients to the dry ingredients and stir until just moistened.
- Spoon the batter into the lined muffin tins, filling each about 1/2 full.
- For the streusel topping, combine sugar, flour, and cinnamon, then cut in the butter until crumbly.
- Sprinkle the streusel over the muffin batter.
- Bake for 16-18 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a cooling rack.
