Instructions
- Preheat the oven to 425°F (218°C) and prepare a muffin pan.
- Mix the crumb topping ingredients until crumbly and set aside.
- Whisk together the dry ingredients for the muffins in a bowl.
- In a separate bowl, cream the butter and sugars, then add the eggs, yogurt, and vanilla.
- Combine the wet and dry ingredients, then fold in the chopped peaches.
- Fill the muffin cups with batter and add the crumb topping.
- Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for an additional 16-19 minutes.
- Cool the muffins before serving and optionally drizzle with icing.
