Ingredients

The muffins

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ cup sugar
  • ¼ cup canola oil
  • 1 large egg
  • cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, peeled and chopped

The cream cheese filling

  • 6 tablespoons cream cheese at room temperature
  • 1 tablespoon sugar
  • ¼ teaspoon cinnamon

For sprinkling

  • to taste cinnamon and sugar

Instructions

  1. Preheat the oven to 400°F and prepare a muffin tin with liners or grease it.
  2. In a medium bowl, whisk together the flour, salt, baking powder, and cinnamon, then whisk in the sugar.
  3. In another bowl, mix the canola oil, egg, milk, and vanilla until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently to avoid overmixing, then fold in the peaches.
  5. In a small bowl, mix the cream cheese, sugar, and cinnamon until smooth.
  6. Fill each muffin cup halfway with batter, add a spoonful of cream cheese filling, then cover with more batter and sprinkle with cinnamon and sugar.
  7. Bake for 17-20 minutes until golden brown and a toothpick comes out clean, then cool on a rack.
