Instructions
- Preheat the oven to 400°F and prepare a muffin tin with liners or grease it.
- In a medium bowl, whisk together the flour, salt, baking powder, and cinnamon, then whisk in the sugar.
- In another bowl, mix the canola oil, egg, milk, and vanilla until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently to avoid overmixing, then fold in the peaches.
- In a small bowl, mix the cream cheese, sugar, and cinnamon until smooth.
- Fill each muffin cup halfway with batter, add a spoonful of cream cheese filling, then cover with more batter and sprinkle with cinnamon and sugar.
- Bake for 17-20 minutes until golden brown and a toothpick comes out clean, then cool on a rack.
