Instructions
- Preheat the oven to 375°F and prepare muffin pans.
- In a large bowl, mix the dry ingredients for the muffins.
- In a separate bowl, combine the wet ingredients and then mix with the dry ingredients until just combined.
- Gently fold in the diced peaches.
- Prepare the streusel topping by mixing all ingredients until crumbly.
- Fill muffin cups ¾ full with batter and top with streusel.
- Bake for 18-20 minutes, then cool for 5 minutes before serving.
