Instructions
- Preheat the oven to 350°F and line a muffin tin with cupcake liners.
- In a mixing bowl, beat together cream cheese, butter, and applesauce until blended.
- Add sugar, vanilla, eggs, and egg whites to the mixture and beat until combined.
- In a separate bowl, mix flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients and buttermilk to the wet mixture, beating on low until blended.
- Gently fold in the chopped peaches.
- Spoon the batter into the muffin liners, filling them about ⅔ full.
- Bake for 25 minutes and then cool on a wire rack.
