Ingredients

  • 2.5 oz 1/3 less fat cream cheese, softened
  • 1 ½ tablespoons light butter, softened
  • 5 teaspoons unsweetened applesauce
  • cup sugar
  • ¾ teaspoon vanilla extract
  • 1 large egg white
  • 1 large egg
  • 1 cup white whole wheat flour
  • ½ teaspoon baking powder
  • teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup low-fat buttermilk
  • 1 cup chopped fresh peaches

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with cupcake liners.
  2. In a mixing bowl, beat together cream cheese, butter, and applesauce until blended.
  3. Add sugar, vanilla, eggs, and egg whites to the mixture and beat until combined.
  4. In a separate bowl, mix flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients and buttermilk to the wet mixture, beating on low until blended.
  6. Gently fold in the chopped peaches.
  7. Spoon the batter into the muffin liners, filling them about ⅔ full.
  8. Bake for 25 minutes and then cool on a wire rack.
