Ingredients

The muffins

  • 1 large egg, lightly beaten
  • ¼ cup coconut oil, canola oil or melted butter
  • ¼ cup Truvía® Brown Sugar Blend
  • ¾ cup lowfat buttermilk
  • cups white whole wheat flour
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • cups peeled and diced fresh peaches

Oat Streusel Topping

  • 3 Tbsp quick-cooking oats
  • 2 Tbsp white whole wheat flour
  • 2 Tbsp Truvía® Brown Sugar Blend
  • ¼ tsp ground cinnamon
  • 2 Tbsp firm butter

Instructions

  1. Preheat the oven to 400°F and prepare muffin cups with liners or grease them.
  2. Make the Oat-Streusel Topping and set aside.
  3. In a medium bowl, combine the egg, oil, Truvía® Brown Sugar Blend, and buttermilk.
  4. In a separate small bowl, mix the flour, baking soda, cinnamon, and salt.
  5. Add the dry ingredients to the wet mixture and fold in the diced peaches.
  6. Divide the batter evenly among the muffin cups and sprinkle with the Oat-Streusel Topping.
  7. Bake for 18-20 minutes or until lightly browned and a toothpick comes out clean.
