Instructions
- Preheat the oven to 350°F.
- Line or grease a muffin tin.
- In a medium bowl, whisk together the wet ingredients, including the eggs.
- Add the dry ingredients and mix well.
- Fold in the chopped peach until combined.
- Scoop the batter into the muffin cups.
- In a small bowl, mix the topping ingredients.
- Evenly distribute the topping over each muffin.
- Bake for 28-30 minutes until a toothpick comes out clean.
- Remove from the oven and let cool before serving.
