Ingredients

The muffins

  • ½ cup coconut flour
  • 3 units eggs
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • a pinch nutmeg
  • ½ cup full fat coconut milk
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil or ghee
  • 1 cup fresh peach, chopped
  • a pinch sea salt

The topping

  • 1 cup fresh peach, chopped
  • ½ cup chopped walnuts
  • 2 tbsp maple syrup
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. Line or grease a muffin tin.
  3. In a medium bowl, whisk together the wet ingredients, including the eggs.
  4. Add the dry ingredients and mix well.
  5. Fold in the chopped peach until combined.
  6. Scoop the batter into the muffin cups.
  7. In a small bowl, mix the topping ingredients.
  8. Evenly distribute the topping over each muffin.
  9. Bake for 28-30 minutes until a toothpick comes out clean.
  10. Remove from the oven and let cool before serving.
