Ingredients

The streusel

  • ¾ cup all purpose flour
  • ¾ cup light brown sugar
  • ½ tsp ground cinnamon
  • 6 tbsp cold unsalted butter, cut into cubes

The cake

  • 2 cups all purpose flour
  • 2 tbsp all purpose flour
  • 1 tsp salt
  • tsp baking powder
  • ½ tsp baking soda
  • 1 cup unsalted butter, softened
  • 2 cups white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ¾ cup plain Greek yogurt
  • ¼ cup cold brew coffee

The vanilla icing

  • 1 cup icing sugar
  • 1 tsp vanilla extract
  • 2 tbsp cold brew coffee

Instructions

  1. Preheat the oven to 350°F and prepare a 9-10 inch springform pan by greasing it with butter and dusting with flour.
  2. Make the streusel by mixing flour, brown sugar, cinnamon, and salt in a bowl, then rub in the butter until crumbly and set in the fridge.
  3. In a small bowl, mix together flour, salt, baking powder, and baking soda, then set aside.
  4. In a large bowl, cream together butter and sugar until fluffy, then add eggs and mix until incorporated.
  5. Add Greek yogurt, vanilla extract, and cold brew coffee, mixing until smooth.
  6. Gradually add the dry ingredients, mixing until combined.
  7. Pour half of the batter into the prepared pan, sprinkle half of the streusel on top, then add the remaining batter and top with the rest of the streusel.
  8. Bake for 40-60 minutes, checking at 40 minutes for doneness with a toothpick.
  9. Let the cake cool slightly in the pan before transferring to a wire rack to cool completely.
  10. For the icing, mix icing sugar, vanilla, and coffee until smooth, then drizzle over the cooled cake before serving.
