Instructions
- Preheat the oven to 350°F and prepare a 9-10 inch springform pan by greasing it with butter and dusting with flour.
- Make the streusel by mixing flour, brown sugar, cinnamon, and salt in a bowl, then rub in the butter until crumbly and set in the fridge.
- In a small bowl, mix together flour, salt, baking powder, and baking soda, then set aside.
- In a large bowl, cream together butter and sugar until fluffy, then add eggs and mix until incorporated.
- Add Greek yogurt, vanilla extract, and cold brew coffee, mixing until smooth.
- Gradually add the dry ingredients, mixing until combined.
- Pour half of the batter into the prepared pan, sprinkle half of the streusel on top, then add the remaining batter and top with the rest of the streusel.
- Bake for 40-60 minutes, checking at 40 minutes for doneness with a toothpick.
- Let the cake cool slightly in the pan before transferring to a wire rack to cool completely.
- For the icing, mix icing sugar, vanilla, and coffee until smooth, then drizzle over the cooled cake before serving.
