Ingredients

The soup

  • 1 tablespoon olive oil
  • 1 cup diced onion or leeks
  • 1 cup diced celery
  • 1 cup diced carrot
  • 3 cloves garlic, finely minced
  • 8 cups chopped cauliflower florets
  • 4 cups chicken or vegetable broth
  • 1 teaspoon salt
  • 1 pinch black pepper
  • 1 cup milk
  • ¼ cup all-purpose flour
  • 1 cup shredded sharp cheddar cheese

Optional garnishes

  • to taste cooked, crumbled bacon
  • to taste chopped chives or green onions
  • to taste sour cream
  • to taste extra shredded cheese

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté the onion or leeks, celery, carrots, and garlic until softened.
  2. Add the cauliflower, broth, salt, and pepper. Stir and bring to a simmer, then cover and cook until the vegetables are very tender.
  3. Blend or mash the soup to your desired consistency.
  4. Whisk together the milk and flour until smooth, then stir into the soup and cook until slightly thickened.
  5. Remove from heat and stir in the shredded cheese until melted. Adjust seasoning if needed.
  6. Serve with optional garnishes like bacon, chives, sour cream, and extra cheese.
