Instructions
- Heat olive oil in a large pot over medium heat and sauté the onion or leeks, celery, carrots, and garlic until softened.
- Add the cauliflower, broth, salt, and pepper. Stir and bring to a simmer, then cover and cook until the vegetables are very tender.
- Blend or mash the soup to your desired consistency.
- Whisk together the milk and flour until smooth, then stir into the soup and cook until slightly thickened.
- Remove from heat and stir in the shredded cheese until melted. Adjust seasoning if needed.
- Serve with optional garnishes like bacon, chives, sour cream, and extra cheese.
