Easy Cauliflower Soup

Ingredients

The base

  • 2 teaspoons cooking fat of choice
  • 1 medium sweet onion, diced small
  • 2 cloves garlic, peeled and minced
  • 24 ounces cauliflower, broken into small florets
  • 3 cups chicken broth
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary, chopped

The creamy components

  • 1 cup whole milk
  • 1 cup sharp cheddar cheese, shredded

The greens and toppings

  • 2 cups kale, torn into small pieces
  • 3 slices bacon, cooked crisp and chopped
  • 1 tablespoon fresh chives (optional)
  • 1 tablespoon fresh parsley (optional)

Seasoning

  • to taste salt
  • to taste black pepper

Instructions

  1. Heat a large pot over medium-high heat and add the cooking fat.
  2. Sauté the onions until softened, then add the garlic and cook until fragrant.
  3. Add the cauliflower florets, broth, thyme, and rosemary, and bring to a low boil.
  4. Cover and simmer until the cauliflower is tender, about 20-25 minutes.
  5. Blend half of the soup mixture until smooth and return it to the pot.
  6. Stir in the milk, cheese, and kale, and heat until the kale wilts.
  7. Add the bacon, chives, and parsley, and adjust seasoning before serving.
