Ingredients

  • 1 tablespoon coconut oil
  • 1 pound boneless chicken, cubed
  • 1 medium red bell pepper, chopped
  • 1 teaspoon minced garlic
  • 1 cup uncooked quinoa, rinsed
  • 1 ¼ cups chicken or vegetable broth
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper
  • ¼ teaspoon cayenne pepper
  • 2 cups chopped spinach
  • 3 cups broccoli florets
  • 2 ounces Parmesan cheese, grated

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add chicken and cook for about 5 minutes until browned.
  3. Stir in bell pepper, garlic, and quinoa, cooking for 4 minutes while stirring often.
  4. Pour in the broth and season with salt, black pepper, and cayenne pepper; bring to a boil.
  5. Once boiling, reduce heat to a simmer and cover; cook for 15 minutes.
  6. Add spinach and broccoli, cooking for an additional 10 minutes.
  7. Sprinkle with Parmesan cheese and serve warm.
