Instructions
- Heat oil in a large skillet over medium-high heat.
- Add chicken and cook for about 5 minutes until browned.
- Stir in bell pepper, garlic, and quinoa, cooking for 4 minutes while stirring often.
- Pour in the broth and season with salt, black pepper, and cayenne pepper; bring to a boil.
- Once boiling, reduce heat to a simmer and cover; cook for 15 minutes.
- Add spinach and broccoli, cooking for an additional 10 minutes.
- Sprinkle with Parmesan cheese and serve warm.
