Ingredients

The chicken and vegetables

  • 2 pieces Chicken Breasts, 6 oz. each
  • 20 pieces Brussel Sprouts, halved
  • 10 pieces Cherry Tomatoes, halved

The sauce

  • ¼ cup Dijon Mustard
  • 2 tablespoons Whole Grain Mustard
  • 3 tablespoons Honey
  • ¼ cup Barbeque Sauce

Instructions

  1. Preheat the oven to 425 degrees.
  2. Pound the chicken breasts to an even thickness and season with salt and pepper.
  3. Halve the brussel sprouts, drizzle with olive oil, and season with salt and pepper.
  4. Mix together the Dijon mustard, whole grain mustard, honey, and barbeque sauce.
  5. Drizzle the sheet pan with olive oil, place the chicken on one side and the brussel sprouts on the other.
  6. Bake for 10 minutes, then brush the chicken with sauce and toss the brussel sprouts.
  7. Return to the oven for another 10 minutes, then brush more sauce on the chicken and remove the brussel sprouts.
  8. Turn the oven to broil for 3-5 minutes until the sauce is sticky.
  9. Remove the chicken and return the brussel sprouts to the pan to keep warm.
  10. Halve the cherry tomatoes, sprinkle with salt, and toss them in the pan to warm slightly.
