Instructions
- Preheat the oven to 425 degrees.
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Halve the brussel sprouts, drizzle with olive oil, and season with salt and pepper.
- Mix together the Dijon mustard, whole grain mustard, honey, and barbeque sauce.
- Drizzle the sheet pan with olive oil, place the chicken on one side and the brussel sprouts on the other.
- Bake for 10 minutes, then brush the chicken with sauce and toss the brussel sprouts.
- Return to the oven for another 10 minutes, then brush more sauce on the chicken and remove the brussel sprouts.
- Turn the oven to broil for 3-5 minutes until the sauce is sticky.
- Remove the chicken and return the brussel sprouts to the pan to keep warm.
- Halve the cherry tomatoes, sprinkle with salt, and toss them in the pan to warm slightly.
