Ingredients

The pasta

  • 12 oz gluten free macaroni pasta

The cheese and seasonings

  • 5 oz Colby Jack Cheese
  • ½ tsp chili pepper or paprika
  • ¼ tsp onion powder
  • ¼ tsp garlic
  • dash black pepper
  • dash sea salt

The base

  • 4 tbsp butter
  • 2 cups non dairy milk

The vegetables

  • 3 Roma tomatoes (diced)
  • 2 cans green chilies (drained)

Toppings

  • to taste green onion or chives
  • optional chopped cooked chicken or chicken sausage, chickpeas, turkey, etc.

Instructions

  1. Combine all ingredients in a crock pot.
  2. Stir together and cook on high for 2-3 hours, stirring occasionally.
  3. Serve topped with green onion or chives.
  4. For a crispy topping, transfer to a baking dish and bake at 375°F for 10 minutes with extra cheese.
