Ingredients

The pasta

  • ½ lb macaroni

The sauce

  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 2 cups whole milk
  • 8 oz Monterey Jack cheese, shredded
  • 2 4 oz cans diced green chiles
  • ½ tsp ground cumin
  • tsp crushed red pepper
  • ¼ tsp salt

Instructions

  1. 1. Boil water in a large pot and cook the macaroni until tender, then drain.
  2. 2. In a saucepan, melt butter and whisk in flour, cooking for about 2 minutes.
  3. 3. Gradually whisk in milk and cook until it thickens to a cream-like consistency.
  4. 4. Remove from heat and stir in shredded cheese until melted.
  5. 5. Add drained green chiles, cumin, crushed red pepper, and salt to the cheese sauce, adjusting seasoning as needed.
  6. 6. Combine the cooked macaroni with the cheese sauce and serve hot.
