Instructions
- 1. Boil water in a large pot and cook the macaroni until tender, then drain.
- 2. In a saucepan, melt butter and whisk in flour, cooking for about 2 minutes.
- 3. Gradually whisk in milk and cook until it thickens to a cream-like consistency.
- 4. Remove from heat and stir in shredded cheese until melted.
- 5. Add drained green chiles, cumin, crushed red pepper, and salt to the cheese sauce, adjusting seasoning as needed.
