Instructions
- Heat a large pot over medium heat and add olive oil, carrots, celery, onion, and leek.
- Cook until the vegetables are tender, about 5-6 minutes, then season with salt and pepper.
- Add garlic and Italian seasoning, mixing well.
- Pour in the turkey stock, lemon juice, and bay leaves, stirring for one minute.
- Add the noodles and cook for about 7 minutes until softened.
- Remove bay leaves, add the turkey, and cook for an additional 4-5 minutes until the turkey is warm.
- Taste and adjust seasoning as needed, then serve.
