Ingredients

The base

  • 3 Tablespoons Olive Oil
  • 2 Carrots, peeled and chopped
  • 2 Stalks Celery, chopped
  • 1 Medium Yellow Onion, chopped
  • 2 Leeks, chopped (whites and light green parts only)
  • 1 Teaspoon Sea Salt
  • 1 Teaspoon Black Pepper
  • 3 Cloves Garlic, minced

The broth

  • 8 Cups Turkey Stock (or chicken stock)
  • 1 Lemon juiced
  • 1 Tablespoon Italian Seasoning
  • 2 Bay Leaves

The noodles and turkey

  • 1 12 Oz. Package Egg Noodles
  • 2 Cups Pre-Cooked Turkey, shredded or cubed

Instructions

  1. Heat a large pot over medium heat and add olive oil, carrots, celery, onion, and leek.
  2. Cook until the vegetables are tender, about 5-6 minutes, then season with salt and pepper.
  3. Add garlic and Italian seasoning, mixing well.
  4. Pour in the turkey stock, lemon juice, and bay leaves, stirring for one minute.
  5. Add the noodles and cook for about 7 minutes until softened.
  6. Remove bay leaves, add the turkey, and cook for an additional 4-5 minutes until the turkey is warm.
  7. Taste and adjust seasoning as needed, then serve.
