Easy Turkey Noodle Soup

For the Broth

For Noodle Bowls

rice noodles

shredded leftover turkey

cilantro, mint, lime, hot sauce, fish sauce, soy sauce, chili peppers, sprouts, or any other toppings
Instructions
- Simmer all broth ingredients in a large stock pot for about an hour.
- Strain the broth through a fine mesh colander, reserving the liquid and discarding the solids.
- Return the broth to heat and add the rice noodles, letting them soak until soft (about 10 minutes).
- Add the shredded turkey to the pot.
- Transfer the noodles and turkey to bowls and ladle the broth over them.
- Top with desired garnishes, especially lime.
