Easy Turkey Noodle Soup

Ingredients

For the Broth

  • 6–8 cups turkey broth
  • 2 tablespoons fish sauce
  • 2 whole star anise
  • 6 whole cloves
  • ¼ cup cilantro stems
  • 1 tablespoon dark brown sugar
  • 1 stick cinnamon
  • 1 3-inch piece ginger, peeled and cut into pieces

For Noodle Bowls

  • 8 ounces rice noodles
  • 2 cups shredded leftover turkey
  • to taste cilantro, mint, lime, hot sauce, fish sauce, soy sauce, chili peppers, sprouts, or any other toppings

Instructions

  1. Simmer all broth ingredients in a large stock pot for about an hour.
  2. Strain the broth through a fine mesh colander, reserving the liquid and discarding the solids.
  3. Return the broth to heat and add the rice noodles, letting them soak until soft (about 10 minutes).
  4. Add the shredded turkey to the pot.
  5. Transfer the noodles and turkey to bowls and ladle the broth over them.
  6. Top with desired garnishes, especially lime.
