The Curry Sauce

Instructions
- Preheat the oven to 375°F.
- Mix all meatball ingredients (except olive oil) in a bowl.
- Heat olive oil in a skillet over medium heat and form meatballs using a tablespoon scoop.
- Brown the meatballs for 4-5 minutes and then remove them from the skillet.
- In a separate bowl, mix coconut milk, curry paste, lime juice, dragon sauce, salt, and pepper.
- Sauté the vegetables in the same skillet for 2 minutes.
- Add the curry sauce to the vegetables and bring to a boil.
- Add the browned meatballs to the skillet and bake in the oven for 15 minutes.
