Ingredients

The Meatballs

  • 1 pound ground chicken
  • ¼ cup old fashioned rolled oats
  • ¼ cup white whole wheat flour
  • 1 small sweet potato, grated
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • teaspoon pepper
  • 1 tablespoon olive oil

The Curry Sauce

  • 1 tablespoon olive oil
  • 1 15-ounce can full-fat coconut milk
  • 1 small red onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 3 tablespoons green curry paste
  • 3 tablespoons lime juice
  • ½ tablespoon green dragon or hot sauce
  • to taste salt

Instructions

  1. Preheat the oven to 375°F.
  2. Mix all meatball ingredients (except olive oil) in a bowl.
  3. Heat olive oil in a skillet over medium heat and form meatballs using a tablespoon scoop.
  4. Brown the meatballs for 4-5 minutes and then remove them from the skillet.
  5. In a separate bowl, mix coconut milk, curry paste, lime juice, dragon sauce, salt, and pepper.
  6. Sauté the vegetables in the same skillet for 2 minutes.
  7. Add the curry sauce to the vegetables and bring to a boil.
  8. Add the browned meatballs to the skillet and bake in the oven for 15 minutes.
