Ingredients

The chicken

  • 4 oz thin boneless skinless chicken breast cutlets

The coating

  • 3 tablespoons all purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

The cooking fats

  • 1 tablespoon olive oil
  • 1 tablespoon light butter

The sauce

  • ½ cup low sodium fat free chicken broth
  • 3 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • ¼ cup capers, drained and rinsed

For garnish

  • to taste fresh parsley, chopped

Instructions

  1. Combine flour, salt, and pepper in a large Ziploc bag, then add chicken and shake to coat.
  2. Heat butter and oil in a skillet over medium-high heat, then cook chicken for 3 minutes on one side until golden.
  3. Flip chicken and cook for an additional 3-4 minutes until cooked through, then remove and keep warm.
  4. Add chicken broth to the pan, scraping up browned bits, then stir in lemon juice, garlic, and capers, cooking for 4-5 minutes until sauce reduces.
  5. Pour sauce over chicken and garnish with parsley if desired.
