Ingredients

The salad

  • 1 head cauliflower
  • 1 cup cooked lentils
  • 1 cup walnuts
  • ½ cup goat cheese
  • 1 cup radicchio
  • 2 tablespoons fresh tarragon

The dressing

  • 2 anchovies minced anchovies
  • 1 small shallot
  • 1 tablespoon mustard
  • 1 tablespoon honey
  • ¼ cup currants

Instructions

  1. Preheat the oven and prepare a baking sheet.
  2. Cut the cauliflower into florets and roast until golden.
  3. In a bowl, combine cooked lentils, walnuts, radicchio, and tarragon.
  4. Prepare the dressing by mixing anchovies, shallot, mustard, honey, and currants.
  5. Toss the salad with the dressing and top with roasted cauliflower and goat cheese.
