Ingredients

Roasted Cauliflower

  • 1 head Cauliflower
  • 2 tbsp Olive oil
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Dressing

  • cup Mayonnaise
  • cup Sour cream
  • 1 tbsp Dijon mustard
  • ½ tsp Garlic powder
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Add-ins

  • 6 slices Cooked bacon
  • ½ cup Cheddar cheese
  • ¼ cup Green onions

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Toss the cauliflower florets with olive oil, salt, and pepper.
  3. Spread the cauliflower in a single layer on a baking sheet and roast for 20-25 minutes until tender and browned.
  4. Allow the roasted cauliflower to cool completely.
  5. In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, garlic powder, salt, and pepper.
  6. Combine the cooled cauliflower, bacon, cheese, and green onions with the dressing and mix well.
  7. Serve immediately or chill for 2 hours for better flavor.
