Instructions
- 1. Preheat the oven to 400 degrees and line a baking sheet with foil.
- 2. In a large bowl, combine cauliflower, olive oil, garlic, lemon juice, salt, and pepper.
- 3. Transfer the mixture to the prepared baking sheet, arranging the cauliflower with flat sides down.
- 4. Roast for 35 to 40 minutes until tender-crisp and browning around the edges.
- 5. Remove from the oven, sprinkle with Parmesan cheese, and toss to coat.
- 6. Return to the oven and bake for an additional 1 to 2 minutes until the cheese is melted.
