Ingredients

The cauliflower

  • 2 pounds cauliflower florets

The seasoning

  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The topping

  • ¼ cup shredded Parmesan cheese

Instructions

  1. 1. Preheat the oven to 400 degrees and line a baking sheet with foil.
  2. 2. In a large bowl, combine cauliflower, olive oil, garlic, lemon juice, salt, and pepper.
  3. 3. Transfer the mixture to the prepared baking sheet, arranging the cauliflower with flat sides down.
  4. 4. Roast for 35 to 40 minutes until tender-crisp and browning around the edges.
  5. 5. Remove from the oven, sprinkle with Parmesan cheese, and toss to coat.
  6. 6. Return to the oven and bake for an additional 1 to 2 minutes until the cheese is melted.
