Ingredients

The cauliflower

  • 1 medium cauliflower

The seasoning

  • to taste extra-virgin olive oil
  • to taste sea salt
  • to taste freshly ground black pepper

Optional additions

  • ¼ cup chopped fresh parsley
  • 1 zest lemon
  • to taste grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. Break the cauliflower into bite-sized florets.
  3. Toss the florets with olive oil, salt, and pepper, then spread them evenly onto the baking sheet.
  4. Roast for 25 to 35 minutes, or until the florets are tender and browned around the edges.
  5. Season to taste and, if desired, toss with lemon zest, parsley, and/or Parmesan cheese before serving.
