Ingredients

The cauliflower

  • 1 medium cauliflower

The seasoning

  • to taste extra-virgin olive oil
  • to taste sea salt
  • to taste freshly ground black pepper
  • 1 zest lemon
  • ¼ cup chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. Break the cauliflower into bite-sized florets.
  3. Toss the florets with olive oil, salt, and pepper, then spread them evenly on the baking sheet.
  4. Roast for 25 to 30 minutes, or until browned around the edges.
  5. Season to taste with more salt and pepper, and toss with lemon zest and parsley before serving.
