Instructions
- Preheat the oven to 425°F.
- Trim the leaves off the cauliflower and cut it into small 1-inch florets.
- In a bowl, toss the cauliflower with olive oil, garlic, coriander seeds, cumin seeds, salt, pepper, chili flakes, and lemon zest until well coated.
- Spread the mixture on a parchment-lined baking sheet and bake for 20-25 minutes, tossing halfway through, until the cauliflower is fork-tender and lightly crispy.
- Transfer to a serving dish, toss with fresh parsley, and adjust seasoning with salt and lemon juice if desired.
