Ingredients

The cauliflower

  • 1 large head cauliflower

The seasoning

  • 3 tablespoons olive oil
  • 6–8 cloves garlic
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • ¼–½ teaspoon chili flakes
  • 1 zest lemon
  • ½ cup chopped flat-leaf parsley

Instructions

  1. Preheat the oven to 425°F.
  2. Trim the leaves off the cauliflower and cut it into small 1-inch florets.
  3. In a bowl, toss the cauliflower with olive oil, garlic, coriander seeds, cumin seeds, salt, pepper, chili flakes, and lemon zest until well coated.
  4. Spread the mixture on a parchment-lined baking sheet and bake for 20-25 minutes, tossing halfway through, until the cauliflower is fork-tender and lightly crispy.
  5. Transfer to a serving dish, toss with fresh parsley, and adjust seasoning with salt and lemon juice if desired.
