Ingredients

The cauliflower

  • 1 head cauliflower

The seasoning

  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon ground chipotle chile pepper
  • ¼ teaspoon ground cumin

Instructions

  1. Preheat the oven to 425°F.
  2. Slice the cauliflower in half and remove the core and leaves.
  3. Cut the cauliflower into florets of roughly the same size.
  4. Place the florets cut side down on a baking sheet.
  5. Drizzle olive oil over the cauliflower.
  6. Mix the salt, pepper, chipotle chile powder, and cumin in a bowl and sprinkle over the cauliflower.
  7. Toss to coat the florets evenly.
  8. Bake for 20-25 minutes, flipping halfway if desired.
  9. Serve hot or refrigerate for up to 4-5 days.
