Instructions
- Preheat the oven to 425°F.
- Slice the cauliflower in half and remove the core and leaves.
- Cut the cauliflower into florets of roughly the same size.
- Place the florets cut side down on a baking sheet.
- Drizzle olive oil over the cauliflower.
- Mix the salt, pepper, chipotle chile powder, and cumin in a bowl and sprinkle over the cauliflower.
- Toss to coat the florets evenly.
- Bake for 20-25 minutes, flipping halfway if desired.
- Serve hot or refrigerate for up to 4-5 days.
