Ingredients

The vegetables

  • 8 ounces baby bella mushrooms
  • 1.5 pounds potatoes
  • 1 large red bell pepper
  • 1 medium onion
  • 3 tablespoons olive oil
  • to taste none sea salt and freshly-cracked black pepper

The protein

  • 1 pound ground Italian sausage
  • 4 cloves garlic
  • 2 handfuls fresh kale

The egg mixture

  • 15 none eggs
  • 2/3 cup milk
  • 1.5 tablespoons Old Bay Seasoning

Instructions

  1. Preheat the oven to 400°F and prepare a baking pan.
  2. Roast the vegetables until tender, then transfer to the baking dish.
  3. Brown the sausage in a skillet, then add garlic and kale to sauté briefly.
  4. Whisk together the eggs, milk, Old Bay seasoning, salt, and pepper.
  5. Combine the roasted veggies and sausage in the baking dish, then pour the egg mixture on top.
  6. Bake uncovered until a toothpick comes out clean, then cool slightly before serving.
