Healthy Breakfast Casserole

Instructions
- Preheat the oven to 375°F and coat a baking dish with nonstick spray.
- Brown the sausage in a skillet and then transfer it to a mixing bowl.
- Sauté the bell pepper and green onions until tender, then add the spinach until wilted.
- Combine the sautéed vegetables with the sausage, hash browns, and half of the cheese in the mixing bowl.
- In a separate bowl, whisk together the eggs, milk, hot sauce, salt, and pepper.
- Pour the egg mixture over the sausage and vegetable mixture, then stir to combine.
- Transfer the mixture to the prepared baking dish, top with remaining cheese, cover with foil, and bake for 30 minutes.
- Remove the foil and bake for an additional 15 to 20 minutes until set.
- Let rest, sprinkle with green onions, slice, and serve.
