Ingredients

  • 1 pound Italian turkey sausage or chicken sausage
  • 1 teaspoon extra virgin olive oil
  • 1 medium red bell pepper
  • ¾ cup green onions
  • 5 ounces baby spinach
  • 10 large eggs
  • ½ cup milk
  • 1 to 2 teaspoons hot sauce
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 16 ounces frozen diced hash browns
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 375°F and coat a baking dish with nonstick spray.
  2. Brown the sausage in a skillet and then transfer it to a mixing bowl.
  3. Sauté the bell pepper and green onions until tender, then add the spinach until wilted.
  4. Combine the sautéed vegetables with the sausage, hash browns, and half of the cheese in the mixing bowl.
  5. In a separate bowl, whisk together the eggs, milk, hot sauce, salt, and pepper.
  6. Pour the egg mixture over the sausage and vegetable mixture, then stir to combine.
  7. Transfer the mixture to the prepared baking dish, top with remaining cheese, cover with foil, and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15 to 20 minutes until set.
  9. Let rest, sprinkle with green onions, slice, and serve.
