Healthy Breakfast Casserole

Instructions
- Preheat the oven to 350°F and grease a 9x13-inch pan with butter.
- In a skillet, heat olive oil and sauté bell peppers and green onion until tender.
- Add spinach and cook until wilted, then let the mixture cool.
- In a bowl, whisk together eggs, dairy, hot sauce, salt, and pepper.
- Stir in half of the cheese and then add the cooled vegetable mixture.
- Pour the combined mixture into the baking pan and top with remaining cheese.
- Bake for 25 to 35 minutes until the eggs are set and a fork comes out clean.
