Ingredients

The casserole

  • 1 tablespoon extra-virgin olive oil
  • 2 medium red bell peppers, chopped
  • ¾ cup thinly sliced green onion
  • 5 ounces roughly chopped spinach
  • 12 eggs
  • 3 tablespoons full-fat dairy (heavy cream, half-and-half, whole milk, sour cream or yogurt)
  • ½ teaspoon fine salt
  • 10 twists freshly ground black pepper
  • 4 ounces crumbled feta or goat cheese

Seasoning

  • Several dashes hot sauce

Instructions

  1. Preheat the oven to 350°F and grease a 9x13-inch pan with butter.
  2. In a skillet, heat olive oil and sauté bell peppers and green onion until tender.
  3. Add spinach and cook until wilted, then let the mixture cool.
  4. In a bowl, whisk together eggs, dairy, hot sauce, salt, and pepper.
  5. Stir in half of the cheese and then add the cooled vegetable mixture.
  6. Pour the combined mixture into the baking pan and top with remaining cheese.
  7. Bake for 25 to 35 minutes until the eggs are set and a fork comes out clean.
