Instructions
- Preheat the oven to 350°F.
- Cook the ground turkey sausage in a skillet until browned and crumbled, then set aside.
- In the same skillet, sauté the onion and bell peppers until translucent, then add the spinach until wilted.
- In a casserole dish, combine the cooked sausage, sautéed veggies, and sprinkle with green onions.
- In a bowl, whisk together the eggs, half and half, salt, pepper, and dried mustard, then mix in the shredded cheese.
- Pour the egg mixture over the sausage and veggies, mixing to combine evenly.
- Bake for 35 to 40 minutes until set and edges are browned, then let cool for 5 minutes before serving.
