Ingredients

The base

  • 12 large eggs
  • 1 lb ground turkey or chicken sausage
  • cup half and half or milk
  • 1 Tbsp olive oil

The vegetables

  • ½ cup onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cups baby spinach, roughly chopped
  • 2 green onions, chopped

The seasonings

  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp dried mustard

The cheese

  • cups shredded sharp cheddar cheese or cheese of choice

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the ground turkey sausage in a skillet until browned and crumbled, then set aside.
  3. In the same skillet, sauté the onion and bell peppers until translucent, then add the spinach until wilted.
  4. In a casserole dish, combine the cooked sausage, sautéed veggies, and sprinkle with green onions.
  5. In a bowl, whisk together the eggs, half and half, salt, pepper, and dried mustard, then mix in the shredded cheese.
  6. Pour the egg mixture over the sausage and veggies, mixing to combine evenly.
  7. Bake for 35 to 40 minutes until set and edges are browned, then let cool for 5 minutes before serving.
