Instructions
- Preheat the oven to 325ºF and grease a 9x13-inch pan.
- In a skillet, heat olive oil and cook the sausage until browned.
- Transfer the sausage to a colander over the spinach to wilt it.
- In the same skillet, cook the onions until caramelized and combine with the sausage and spinach.
- Spread the mixture in the prepared pan and top with grated cheese.
- In a bowl, beat the eggs with salt, pepper, and half and half, then pour over the mixture in the pan.
- Bake for 25-40 minutes, checking for doneness after 25 minutes.
