Sausage, Egg, and Cheese Casserole

Ingredients

The base

  • 12 eggs eggs
  • 1 cup half and half
  • 1 tablespoon olive oil
  • 1 yellow onion yellow onion
  • 4 oz grated cheese

The filling

  • 0.5 to 0.75 lb hot Italian sausage
  • 4 oz baby spinach
  • 1 to 1.5 teaspoons kosher salt
  • to taste freshly cracked black pepper

Instructions

  1. Preheat the oven to 325ºF and grease a 9x13-inch pan.
  2. In a skillet, heat olive oil and cook the sausage until browned.
  3. Transfer the sausage to a colander over the spinach to wilt it.
  4. In the same skillet, cook the onions until caramelized and combine with the sausage and spinach.
  5. Spread the mixture in the prepared pan and top with grated cheese.
  6. In a bowl, beat the eggs with salt, pepper, and half and half, then pour over the mixture in the pan.
  7. Bake for 25-40 minutes, checking for doneness after 25 minutes.
