Ingredients

  • 2 teaspoons olive oil
  • 1 pound breakfast sausage
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • ½ cup yellow onion
  • 1 teaspoon garlic
  • 20 ounces hash browns
  • 12 large eggs
  • ½ cup heavy cream
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 2 tablespoons parsley
  • to taste salt and pepper
  • as needed cooking spray

Instructions

  1. Preheat the oven to 375°F and coat a baking dish with cooking spray.
  2. Heat olive oil in a pan over medium-high heat, add the sausage, and cook until browned.
  3. Drain excess grease, then add onions and peppers, seasoning with salt and pepper; cook until softened.
  4. Add garlic and cook for an additional 30 seconds.
  5. Combine the sausage, vegetables, and hash browns in the baking dish.
  6. In a bowl, whisk together eggs, cream, milk, and seasoning until smooth, then stir in cheese.
  7. Pour the egg mixture over the sausage and vegetable mixture in the dish.
  8. Bake for 45 minutes or until golden brown and set, then sprinkle with parsley and serve.
