Ingredients

The base

  • 3 cups frozen shredded hash brown potatoes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons butter

The filling

  • 1 pound ground breakfast sausage
  • 6 eggs
  • 8 ounces cheddar cheese, shredded
  • ¼ cup scallions or chives, finely chopped

Instructions

  1. Preheat the oven to 425°F and prepare a pie plate or oven-safe skillet with nonstick spray.
  2. In a bowl, mix hash browns with salt and pepper, then drizzle with melted butter and press into the bottom of the prepared dish.
  3. Bake the hash brown crust for 25 minutes until golden brown, then reduce the oven temperature to 350°F.
  4. Cook the sausage in a skillet over medium-high heat until browned, then drain and set aside.
  5. Whisk the eggs in a bowl and combine the cooked sausage, cheese, and scallions in another bowl.
  6. Pour the eggs over the baked hash brown crust, then top with the sausage and cheese mixture.
  7. Return to the oven and bake for an additional 25 to 30 minutes until the eggs are set.
  8. Let cool for 10 minutes before serving.
