Breakfast Hashbrown Casserole

Ingredients

The casserole

  • 2 tbsp ghee
  • 2 lbs frozen shredded potatoes
  • 1 package No Sugar All Natural Pork Breakfast Sausage Little Links
  • 1 onion, diced
  • 4 cups spinach, roughly chopped
  • Chopped chives (optional topping)

The creamy sauce

  • 1 cup chicken broth
  • 1 tbsp fresh sage, diced
  • 1 whole lemon, juice of
  • 2 cups raw cashews
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp ground black pepper
  • 1 tsp sea salt

Instructions

  1. Preheat the oven to 400°F and grease a 9x13 baking dish with ghee.
  2. Spread the shredded potatoes in the baking dish and bake for 10 minutes.
  3. Prepare the onion and spinach and make the sauce by blending all sauce ingredients until smooth.
  4. After 10 minutes, remove the baking dish and add the onion and spinach.
  5. Pour the creamy sauce over the mixture and mix well.
  6. Add the sausage links on top and return to the oven to bake for 20 minutes.
  7. Optionally, broil for the last 3-4 minutes to brown the sausages.
  8. Remove from the oven, top with chives if desired, and let cool before serving.
