Ingredients

The base

  • 120 oz. frozen hash brown patties

The filling

  • 2 Tbsp. extra-virgin olive oil
  • lb. bulk breakfast sausage
  • 1 large onion, finely chopped
  • ½ tsp. kosher salt
  • 4 cloves garlic, coarsely chopped
  • 10 oz. frozen chopped spinach, thawed
  • 18 large eggs
  • 1 cup heavy cream
  • 4 oz. extra-sharp cheddar cheese, coarsely grated

Instructions

  1. Preheat the oven to 450°F and line a baking dish with hash brown patties, baking until golden brown.
  2. Heat olive oil in a skillet and cook the breakfast sausage until browned, then set aside.
  3. In the same pan, cook the onion with salt until softened, then add garlic and spinach, cooking until dried out.
  4. Whisk together eggs, heavy cream, and additional salt and pepper, then mix in the sausage, onion mixture, and cheddar cheese.
  5. Pour the egg mixture over the baked hash browns and bake until set and lightly browned.
