Instructions
- Preheat the oven to 450°F and line a baking dish with hash brown patties, baking until golden brown.
- Heat olive oil in a skillet and cook the breakfast sausage until browned, then set aside.
- In the same pan, cook the onion with salt until softened, then add garlic and spinach, cooking until dried out.
- Whisk together eggs, heavy cream, and additional salt and pepper, then mix in the sausage, onion mixture, and cheddar cheese.
- Pour the egg mixture over the baked hash browns and bake until set and lightly browned.
