Ingredients

The casserole

  • 1 lb ground turkey breast
  • 1 package Monterey Mushroom Let’s Blend Italian
  • 1 Tbsp avocado oil
  • 10 oz frozen chopped spinach, thawed and drained
  • ½ tsp dried red pepper flakes
  • 1 cup mozzarella, shredded (optional)

The eggs

  • 6 large eggs

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat the avocado oil and cook the turkey for about 5-7 minutes until it is no longer pink.
  3. Add the Italian Let’s Blend and cook for an additional 3 minutes, stirring occasionally.
  4. Stir in the spinach and cook for 1-2 minutes, then remove from heat and add the red pepper flakes.
  5. Pour the mixture into a greased 9x13 inch dish and layer with mozzarella cheese if desired.
  6. In a medium bowl, whisk the eggs and pour them over the turkey and vegetable mixture.
  7. Bake for 25-30 minutes or until a knife inserted in the center comes out clean.
  8. Let cool for 5-10 minutes before cutting into squares and serving.
