Sausage and Mushroom Breakfast Casserole

frozen chopped spinach, thawed and drained

Instructions
- Preheat the oven to 350°F.
- In a large skillet, heat the avocado oil and cook the turkey for about 5-7 minutes until it is no longer pink.
- Add the Italian Let’s Blend and cook for an additional 3 minutes, stirring occasionally.
- Stir in the spinach and cook for 1-2 minutes, then remove from heat and add the red pepper flakes.
- Pour the mixture into a greased 9x13 inch dish and layer with mozzarella cheese if desired.
- In a medium bowl, whisk the eggs and pour them over the turkey and vegetable mixture.
- Bake for 25-30 minutes or until a knife inserted in the center comes out clean.
- Let cool for 5-10 minutes before cutting into squares and serving.
