Creamy Spinach and Potato Breakfast Casserole

Instructions
- Preheat the oven to 400°F and grease a small casserole dish or skillet.
- Heat ½ tablespoon of olive oil in a skillet and sauté the onions until soft.
- Add the turkey, chili powder, and onion powder to the skillet and cook until browned.
- In another pan, add the remaining olive oil, garlic, and sage, and sauté for a few minutes before adding the spinach until wilted.
- In a bowl, whisk together the eggs and milk, then mix in the turkey, spinach, potatoes, and Mozzarella cheese.
- Transfer the mixture to the casserole dish and top with Parmesan cheese.
- Bake for 20-25 minutes until golden brown and set.
