Sweet Potato Egg Breakfast Casserole

Ingredients

The base

  • 2 tbsp avocado oil
  • ½ large yellow onion, diced
  • 1 green pepper, diced
  • 5 cups chopped sweet potatoes
  • 3 cloves garlic
  • 1 lb turkey sausage

The egg mixture

  • 10 eggs
  • ½ cup milk
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Chop the vegetables and grease a 9x13 casserole dish.
  3. In a large saucepan, heat the avocado oil.
  4. Add the onion, green pepper, and sweet potato, cooking until soft.
  5. Add garlic for the last minute of cooking, then remove the veggies and place them in the casserole dish.
  6. In the same saucepan, cook the turkey sausage until fully cooked, then mix with the veggies.
  7. In a separate bowl, whisk together the eggs, milk, thyme, salt, pepper, and cheese.
  8. Pour the egg mixture over the veggie and sausage mixture, stirring to combine.
  9. Bake for 40-45 minutes, or until the center is firm, covering with foil if it starts to brown.
  10. Let cool for 15 minutes before serving.
