Sweet Potato Egg Breakfast Casserole

Instructions
- Preheat the oven to 350°F.
- Chop the vegetables and grease a 9x13 casserole dish.
- In a large saucepan, heat the avocado oil.
- Add the onion, green pepper, and sweet potato, cooking until soft.
- Add garlic for the last minute of cooking, then remove the veggies and place them in the casserole dish.
- In the same saucepan, cook the turkey sausage until fully cooked, then mix with the veggies.
- In a separate bowl, whisk together the eggs, milk, thyme, salt, pepper, and cheese.
- Pour the egg mixture over the veggie and sausage mixture, stirring to combine.
- Bake for 40-45 minutes, or until the center is firm, covering with foil if it starts to brown.
- Let cool for 15 minutes before serving.
