Sweet Potato Breakfast Casserole

Instructions
- Preheat the oven to 375ºF and grease a 9×9-inch baking dish.
- In a skillet, heat oil and sauté the sweet potato with a dash of salt until slightly tender.
- In another skillet, cook the ground pork with seasonings until browned.
- Add the peppers and onion to the sweet potatoes and sauté until soft.
- Stir in the spinach and cooked sausage, then remove from heat.
- Whisk the eggs in a bowl with a dash of salt and pepper.
- Combine the sweet potato mixture with the egg mixture in the baking dish.
- Bake for 20-24 minutes or until the center is set.
- Let it set for 5 minutes before cutting into servings.
- Serve with optional avocado and hot sauce.
