Sweet Potato Breakfast Casserole

Ingredients

  • 1 1/2 teaspoons avocado or olive oil
  • 1 large sweet potato, cubed (~2 cups diced)
  • ½ lb. ground pork
  • ½ teaspoon garlic powder
  • ¼ teaspoon Italian seasoning
  • ¼ teaspoon fennel, crushed
  • ¼ teaspoon ground sage
  • ½ teaspoon fine salt
  • pinch black pepper
  • pinch cayenne
  • ½ small red onion, diced or thinly sliced (about ½ cup)
  • ½ large red bell pepper, diced or thinly sliced (about ⅔ cup)
  • 3 cups spinach leaves
  • 8 large eggs
  • to taste fine salt and pepper
  • optional sliced avocado

Instructions

  1. Preheat the oven to 375ºF and grease a 9×9-inch baking dish.
  2. In a skillet, heat oil and sauté the sweet potato with a dash of salt until slightly tender.
  3. In another skillet, cook the ground pork with seasonings until browned.
  4. Add the peppers and onion to the sweet potatoes and sauté until soft.
  5. Stir in the spinach and cooked sausage, then remove from heat.
  6. Whisk the eggs in a bowl with a dash of salt and pepper.
  7. Combine the sweet potato mixture with the egg mixture in the baking dish.
  8. Bake for 20-24 minutes or until the center is set.
  9. Let it set for 5 minutes before cutting into servings.
  10. Serve with optional avocado and hot sauce.
