Turkey Hash Brown Breakfast Casserole

Ingredients

The casserole

  • 3 cups diced hash browns, frozen
  • 1 lb ground turkey
  • ½ cup green bell pepper, chopped
  • ½ cup red bell pepper, chopped
  • 6 large organic eggs
  • 1 cup grated parmesan cheese
  • 2 cups Monterey jack cheese, shredded
  • 2 cups cheddar cheese, shredded
  • 1 cup dairy milk

The seasoning

  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • tsp sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the bell peppers in a medium skillet over medium heat for 5 minutes.
  3. Add the ground turkey and season with smoked paprika, garlic powder, black pepper, and ½ tsp of salt, cooking until no pink remains.
  4. In a large bowl, whisk together the eggs, parmesan cheese, Monterey jack cheese, 1½ cups of cheddar cheese, and milk until combined.
  5. Stir in the diced hash browns and add 1 tsp of salt over them.
  6. Combine the cooked turkey and bell peppers with the egg and hash brown mixture, stirring well.
  7. Pour the mixture into a baking dish and top with the remaining ½ cup of cheddar cheese.
  8. Bake for 45 to 50 minutes until golden brown.
