Ingredients

The enchiladas

  • 10 count La Tortilla Factory Low Carb Tortillas
  • 16 ounces cheddar cheese, shredded
  • 16 ounces shredded chicken
  • ½ bunch green onions, sliced
  • to taste salt and pepper

The sauce

  • 1 full recipe Easy Low Carb Red Enchilada Sauce

For garnish

  • to taste chopped cilantro

Instructions

  1. Prepare the enchilada sauce if you haven't already, simmering it while you shred the chicken.
  2. Shred the chicken and season it with salt and pepper.
  3. Grate the cheese and set it aside.
  4. Preheat the oven to 350°F.
  5. Spoon some sauce into the bottom of a baking pan.
  6. Place a tortilla on a work surface, add cheese and chicken, then roll it up and place seam side down in the pan.
  7. Repeat until all ingredients are used, placing any leftover chicken on top.
  8. Pour the enchilada sauce over the rolled enchiladas and add the remaining cheese on top.
  9. Sprinkle green onions over the cheese.
  10. Bake until hot and bubbly, about 30 minutes.
  11. Garnish with cilantro, guacamole, and sour cream if desired.
