Easy Low Carb Red Enchilada Sauce

Instructions
- Prepare the enchilada sauce if you haven't already, simmering it while you shred the chicken.
- Shred the chicken and season it with salt and pepper.
- Grate the cheese and set it aside.
- Preheat the oven to 350°F.
- Spoon some sauce into the bottom of a baking pan.
- Place a tortilla on a work surface, add cheese and chicken, then roll it up and place seam side down in the pan.
- Repeat until all ingredients are used, placing any leftover chicken on top.
- Pour the enchilada sauce over the rolled enchiladas and add the remaining cheese on top.
- Sprinkle green onions over the cheese.
- Bake until hot and bubbly, about 30 minutes.
- Garnish with cilantro, guacamole, and sour cream if desired.
