Low Carb Chicken Enchiladas

Ingredients

  • 1 full recipe Easy Low Carb Red Enchilada Sauce
  • 10 pieces La Tortilla Factory Low Carb Tortillas
  • 16 ounces cheddar cheese, shredded
  • 16 ounces shredded chicken
  • ½ bunch green onions, sliced
  • to taste chopped cilantro for garnish

Instructions

  1. Prepare the enchilada sauce if not already made.
  2. Shred the chicken and season with salt and pepper.
  3. Preheat the oven to 350°F.
  4. Spoon some enchilada sauce into the bottom of a baking pan.
  5. On a tortilla, place 2 tablespoons of cheese and about ¼ cup of chicken, then roll it up and place seam side down in the pan.
  6. Repeat until all ingredients are used, placing any leftover chicken on top.
  7. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese and green onions.
  8. Bake until hot and bubbly, about 30 minutes.
  9. Garnish with cilantro, guacamole, and sour cream if desired.
