Instructions
- Prepare the enchilada sauce if not already made.
- Shred the chicken and season with salt and pepper.
- Preheat the oven to 350°F.
- Spoon some enchilada sauce into the bottom of a baking pan.
- On a tortilla, place 2 tablespoons of cheese and about ¼ cup of chicken, then roll it up and place seam side down in the pan.
- Repeat until all ingredients are used, placing any leftover chicken on top.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese and green onions.
- Bake until hot and bubbly, about 30 minutes.
- Garnish with cilantro, guacamole, and sour cream if desired.
