Gluten-Free Honey Cake

Ingredients

  • ½ cup boiling water
  • 2 tablespoons organic decaf ground coffee
  • cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ½ cup agave nectar or honey
  • ¼ cup grapeseed oil or palm shortening
  • 2 large eggs
  • ½ cup raisins

Instructions

  1. Brew coffee by pouring boiling water through ground coffee and cool the liquid.
  2. In a large bowl, mix almond flour, salt, baking soda, cinnamon, and cloves.
  3. In another bowl, combine agave, oil, eggs, and cooled coffee.
  4. Combine wet and dry ingredients, then fold in raisins.
  5. Pour the batter into a greased and floured 9-inch springform pan.
  6. Bake at 350°F for 30-35 minutes.
  7. Cool for 1 hour before serving.
