Instructions
- Prepare the basil lemon mocktail by muddling basil leaves with sugar, then add tequila, lemon juice, and egg white, shake well, strain into a glass with ice, and top with sparkling water.
- Cook the linguine according to package directions, reserving 1 cup of pasta water, then drain.
- In a frying pan, melt 2 tbsp of butter over medium heat, add chopped leeks, and cook for 5 minutes.
- Add shallots and garlic to the pan and cook until softened, about 5 more minutes.
- Stir in salt, thyme, and chili flakes, cooking until fragrant.
- Combine the cooked pasta with the leek mixture, adding remaining butter, ½ cup pasta water, and parmesan cheese, mixing until creamy.
- Adjust seasoning as needed and serve garnished with chives, lemon zest, ground pepper, and lemon juice.
