Ingredients

The pasta

  • 200 g linguine
  • 3 tbsp butter
  • 3 pcs leeks, chopped and rinsed
  • 3 cloves garlic, minced
  • 1 pc shallot, diced
  • 1 tsp salt
  • 1 tsp dried thyme
  • ¼ tsp chili flakes
  • 1 cup pasta water
  • 1 cup shredded parmesan cheese
  • 1 pc lemon zest
  • to taste chives, ground pepper, and lemon juice for garnish

The mocktail

  • 4 leaves basil
  • a pinch sugar
  • 2 tsp egg white
  • 2 oz Ritual Zero Proof Tequila Alternative
  • 1 oz lemon juice
  • to top sparkling water

Instructions

  1. Prepare the basil lemon mocktail by muddling basil leaves with sugar, then add tequila, lemon juice, and egg white, shake well, strain into a glass with ice, and top with sparkling water.
  2. Cook the linguine according to package directions, reserving 1 cup of pasta water, then drain.
  3. In a frying pan, melt 2 tbsp of butter over medium heat, add chopped leeks, and cook for 5 minutes.
  4. Add shallots and garlic to the pan and cook until softened, about 5 more minutes.
  5. Stir in salt, thyme, and chili flakes, cooking until fragrant.
  6. Combine the cooked pasta with the leek mixture, adding remaining butter, ½ cup pasta water, and parmesan cheese, mixing until creamy.
  7. Adjust seasoning as needed and serve garnished with chives, lemon zest, ground pepper, and lemon juice.
