Ingredients

The pasta

  • 8 ounces spaghetti

The sauce

  • 4 tablespoons unsalted butter
  • 2 tablespoons lemon zest
  • 2 cloves garlic
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • to taste sea salt
  • to taste freshly ground black pepper
  • for garnish chopped fresh parsley or basil leaves

Instructions

  1. 1. Boil salted water in a large pot and cook the spaghetti until al dente, reserving 1 cup of pasta water before draining.
  2. 2. In a skillet, melt the butter over medium heat until foaming, then reduce heat and add lemon zest and minced garlic, cooking until fragrant.
  3. 3. Transfer the cooked spaghetti to the skillet, adding ½ cup of reserved pasta water, and toss to create a light sauce.
  4. 4. Mix in half of the Parmesan cheese, then add lemon juice and remaining cheese, tossing until smooth.
  5. 5. Adjust consistency with more pasta water if needed, and season with salt, pepper, and additional lemon juice to taste.
  6. 6. Garnish with extra lemon zest and fresh herbs before serving.
