Instructions
- Cook the pasta in salted water according to package instructions and reserve ½ to 1 cup of pasta water before draining.
- Heat olive oil in a large pan over medium-high heat and sauté minced garlic until fragrant.
- Add parsley, lemon juice, vegan Parmesan, sea salt, black pepper, and reserved pasta water to the pan and stir until heated through.
- Toss the cooked pasta in the sauce until well coated, adding more pasta water if needed, and serve with extra parsley and Parmesan on top.
