Easy Lemon Pasta

Ingredients

The pasta

  • 8 ounces spaghetti pasta

The sauce

  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic
  • 1 large lemon (juice)
  • 2 teaspoons parsley
  • ¼ cup vegan Parmesan cheese
  • ¼ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ cup pasta water

Instructions

  1. Cook the pasta in salted water according to package instructions and reserve ½ to 1 cup of pasta water before draining.
  2. Heat olive oil in a large pan over medium-high heat and sauté minced garlic until fragrant.
  3. Add parsley, lemon juice, vegan Parmesan, sea salt, black pepper, and reserved pasta water to the pan and stir until heated through.
  4. Toss the cooked pasta in the sauce until well coated, adding more pasta water if needed, and serve with extra parsley and Parmesan on top.
