Ingredients

The chicken

  • 1 ½ lbs uncooked boneless skinless chicken breasts
  • 6 tablespoons Buffalo wing sauce

The sauce

  • 4 tablespoons light butter
  • ¼ cup flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ cups skim milk
  • 2 ½ cups water

The pasta

  • 10 oz uncooked whole wheat elbow macaroni
  • 6 oz 50% reduced fat sharp cheddar cheese, shredded

Instructions

  1. 1. Cook the chicken breasts in a pot covered with water until done, then chop into pieces and mix with Buffalo sauce.
  2. 2. Melt the butter in the pot, then whisk in flour, salt, and pepper.
  3. 3. Gradually add milk and water, stirring until smooth and bring to a boil.
  4. 4. Add the macaroni and cook for 8 minutes, stirring regularly.
  5. 5. Reduce heat, add cheese, and stir until melted, then mix in the chicken and serve.
