Ingredients

  • 1 ½ lbs uncooked boneless skinless chicken breasts
  • 6 tablespoons barbecue sauce
  • 4 tablespoons light butter
  • ¼ cup flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 ½ cups skim milk
  • 2 ½ cups water
  • 10 oz uncooked elbow macaroni
  • 6 oz 50% reduced fat sharp cheddar cheese, shredded

Instructions

  1. 1. Boil chicken breasts in a pot covered with water for 15-20 minutes until cooked through, then chop and mix with barbecue sauce.
  2. 2. In the same pot, melt butter and whisk in flour, salt, black pepper, and cayenne for one minute.
  3. 3. Slowly whisk in milk and then water, bringing the mixture to a boil.
  4. 4. Stir in elbow macaroni and cook for 8 minutes, stirring regularly.
  5. 5. Reduce heat and mix in shredded cheese until melted, then add the chicken and barbecue sauce mixture.
  6. 6. Stir until everything is heated through and serve.
