Ingredients

The pasta and vegetables

  • 1 pound dry pasta
  • 1 bunch broccoli, cut into bite-sized florets

The sauce

  • 2 tablespoons butter or olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 1 cup vegetable or chicken stock
  • 1 cup milk, warmed
  • 2 ½ cups freshly-grated cheddar cheese
  • ½ cup freshly-grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon finely-ground black pepper

The protein

  • 2 cooked boneless, skinless chicken breasts

Optional toppings

  • ½ cup extra shredded cheddar cheese
  • ½ cup Panko breadcrumbs

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the pasta in salted water until al dente, adding the broccoli for the last 2-3 minutes.
  3. Drain the pasta and broccoli and set aside.
  4. In a separate pan, melt butter and sauté garlic until fragrant.
  5. Whisk in flour and cook for 1 minute, then gradually add stock and milk, stirring until smooth.
  6. Simmer the sauce until thickened, then stir in cheddar, Parmesan, salt, and pepper until smooth.
  7. Combine the cheese sauce with the pasta, broccoli, and chicken.
  8. Serve immediately or transfer to a baking dish, top with extra cheese and Panko, and bake for 15-20 minutes until golden.
