Ingredients

The pasta

  • 9 oz large shell pasta
  • 12 oz broccoli florets

The protein

  • 1 lb boneless skinless chicken breasts

The sauce

  • Tbsp butter
  • ¼ cup all-purpose flour
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • to taste salt and pepper
  • 3 cups low-fat milk
  • 6 oz 2% reduced fat sharp cheddar cheese
  • 1 oz parmesan cheese

Instructions

  1. Boil the pasta according to package instructions, adding broccoli during the last 3 to 4 minutes.
  2. Drain the pasta and broccoli, reserving ¼ cup of pasta water.
  3. In a pot, melt the butter over medium heat and stir in the flour, cooking for 1 minute.
  4. Whisk in the milk gradually, then season with onion powder, garlic powder, salt, and pepper.
  5. Increase the heat to medium-high and cook until the mixture boils and thickens.
  6. Remove from heat, let cool for 1 minute, then stir in the cheddar and parmesan cheese until melted.
  7. Add the drained pasta, broccoli, and chicken, tossing to coat evenly.
