Creamy Chicken Pasta

Ingredients

The pasta

  • 1 package fresh fettuccine or linguine (9 ounces)
  • 1 tablespoon salt

The sauce

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 large shallot, finely chopped
  • ½ cup dry white wine
  • cup heavy whipping cream
  • ¼ cup sun-dried tomatoes
  • ¼ cup minced fresh basil
  • ¼ cup shredded Parmesan cheese
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper (to taste)

Instructions

  1. Boil water with salt and cook the pasta according to package directions for 2 to 3 minutes, then drain and transfer to a serving bowl.
  2. In a skillet, heat olive oil over medium-high heat and cook chicken and shallots until chicken is mostly cooked through, about 5 minutes.
  3. Reduce heat, add wine and cream, and cook until the sauce thickens, about 3 minutes.
  4. Stir in sun-dried tomatoes, basil, Parmesan cheese, and season with salt and pepper.
  5. Pour the sauce over the pasta, garnish with additional Parmesan and basil, and serve.
