Creamy Chicken Pasta

The sauce

boneless, skinless chicken breasts

shallot, finely chopped

dry white wine

heavy whipping cream

sun-dried tomatoes

Instructions
- Boil water with salt and cook the pasta according to package directions for 2 to 3 minutes, then drain and transfer to a serving bowl.
- In a skillet, heat olive oil over medium-high heat and cook chicken and shallots until chicken is mostly cooked through, about 5 minutes.
- Reduce heat, add wine and cream, and cook until the sauce thickens, about 3 minutes.
- Stir in sun-dried tomatoes, basil, Parmesan cheese, and season with salt and pepper.
- Pour the sauce over the pasta, garnish with additional Parmesan and basil, and serve.
